Anita Oberholster, David Block, Andy Waterhouse, and James Campbell talk about their research into the extraction of phenolics during red winemaking, including the effects of grape maturity, anthocyanin additions, temperature, cold soak, and cap management.  They also discuss their efforts to model, predict, and optimize phenolic extraction based on first principles.
