At this Plugged In event, Gail Taylor will describe some of the exciting research on indoor vertical farming underway on the UC Davis campus. This includes training the next generation of vertical farmers and growing diverse wild germplasm of the superfood watercress in these exacting conditions. Watercress is the most nutrient dense leafy green on the planet and in addition to being packed full of vitamin C, also has a peppery chemical hat is known to have anti-cancer properties. Growing indoors provides an opportunity to produce this food crop in clean and highly sustainable conditions with a 90% reduction in water and land requirements. In addition we show how these conditions can help to enhance cancer busting chemicals.
